A blast freezer (also known as shockfroster, flash freezer machine, or air blast freezer) is a special type of cold storage blast freezer designed to blast freeze food or fresh produce rapidly at extremely low temperatures. This is air blast freezing or freezing blast.
Rapid freezing prevents the formation and growth of harmful micro-organisms in the food by neutralizing them.Blast freezers preserve the food at extremely low temperatures (blast freezer temperature typically -18°C to -45°C) and for long duration. In contrast, blast chillers cool food rapidly up to 3°C but only for shorter-term preservation before it is cooked and served.

Under the scheme of technology Upgradation/ Establishment/ Modernization of Food Processing Industries of the mission, all the eligible entrepreneurs interested to set up food processing units in the country including the districts where there is no food processing units are provided financial assistance @25 percent of the cost of plant & machinery and technical civil works. subject to a maximum of Rs. 50 lakh in general areas; 33.33 percent of the cost of plant & machinery and technical civil works, subject to a maximum of Rs. 75 lakh in difficult areas (i.e. Jammu & Kashmir, Himachal Pradesh, Uttarakhand, Andaman & Nicobar Islands and Lakshadweep) and Integrated Tribal Development Project (ITDP) areas; and 50 per cent of the cost of plant & machinery and technical civil works, subject to a maximum of Rs.100 lakh for North-Eastern States including Sikkim.
Under the above scheme of the mission, all the new applications in 12th Plan (2012-17) are received, sanctioned and funds are released by the respective State / UT Governments, for setting up of Food Processing units in the country.
